Dandelion Pesto - A Wonderful Spring Delight
Dandelion is a bitter herb, full of vitamins and nutrients like A, B, C, D, Iron, Potassium, Calcium, and carotenoids. Fresh dandelion leaves gets blended with bright citrus to complement their naturally bitter, and slightly salty flavour, as well as garlic. Sunflower seeds are a nice seed to enjoy in the springtime if it suits you. Feel free to substitute with blanched almonds, or pine nuts in the recipe if you prefer those.
Dandelion is a wonderful herb to support detoxification, digestion, blood purifying which are beneficial to our overall health for springtime, and for our lymphatics.
Ingredients
2 cups - Dandelion Leaves, chopped
3-4 Garlic cloves, minced
1 tbsp - Lemon Juice
1 tbsp - Lemon Zest
1/2 cup - Sunflower seeds
1/2 cup - Avocado Oil or Extra-virgin olive oil
1/2 tsp - Sea Salt
1/4 tsp - Turmeric Powder
1/2 tsp - Black Pepper, freshly ground
1/4 cup - Parmesan or Pecorino, freshly grated
Place all the ingredients in a food processor or blender except the oil and cheese. Once mixture is looking a bit blended, keep blender/processor running and drizzle in your oil. If the mixture is thicker than you would like, feel free to add more oil to get the consistency you like. Next, add in cheese and blend/mix on low speed.
Enjoy with veggie sticks, eggs, crackers, or with meats like fish or chicken with dinner or in a wrap/sandwich is nice too!
